Hướng nghiên cứu

Nghiên cứu của tôi tập trung vào đa dạng hóa và tối ưu hóa các quy trình chế biến, hoàn thiện và bảo quản các sản phẩm thực phẩm có giá trị cao từ nguồn nguyên liệu thiên nhiên, cũng như phát triển các sản phẩm thực phẩm mới và đồ uống craft-bao gồm các loại đồ uống lên men và thực phẩm chức năng-từ các nguyên liệu có nguồn gốc tự nhiên. Tôi cũng nghiên cứu khai thác và đặc trưng hóa các hợp chất có hoạt tính sinh học từ thiên nhiên-bao gồm các chất kháng khuẩn, chống oxy hóa và các chất điều tiết cơ chế đa kháng thuốc ở vi khuẩn-cùng với tiềm năng ứng dụng của chúng trong khoa học thực phẩm và sức khỏe. Song song đó, tôi nghiên cứu tính kháng kháng sinh của vi khuẩn phân lập từ các mẫu thực phẩm và môi trường, góp phần vào công tác giám sát kháng kháng sinh (AMR) theo tiếp cận One Health. Ngoài ra, tôi ứng dụng kỹ thuật metagenomics và metabolomics trong nghiên cứu tương tác thực vật vi sinh vật, nhằm hiểu rõ vai trò của hệ vi sinh vật đối với chất lượng, an toàn và tính năng của thực phẩm.
